<h3 class="wp-block-heading" id="h-charcoal-grilling-for-beginners-how-to-light-charcoal-grill-for-beginners">CHARCOAL GRILLING FOR BEGINNERS &#8211; HOW TO LIGHT CHARCOAL GRILL FOR BEGINNERS</h3>



<p>Lighting a charcoal grill is easier than you think! Grab some old newspaper (or any paper), and crumple it up into 3 or 4 larger balls. Remove your grill grate and load in your charcoal briquettes. Push the balls underneath your pile of charcoal and light them with a torch, stick lighter, or matchstick. </p>



<p>Allow the flames from your firestarter (paper) to catch the charcoal. Your charcoal will ignite— but don&#8217;t put your food straight on the grill just yet! Cooking over top of flames will char and burn your food. Wait until the flames die down and your coals become ashen. This entire process takes some time (up to 1 hour depending on the size of the grill and the amount of charcoal used), so don&#8217;t feel pressured to rush it. Leave the lid off of the grill during this time, as smothering your flames can cause them to extinguish too soon. </p>



<p>Another technique to light your charcoal grill is to use lighter fluid. Start by removing your top grill grate and load in your charcoal briquettes. Form a mound with the charcoal and squeeze the lighter fluid over the top of the mound for 10 seconds. Light your charcoal with a torch, stick lighter, or matchstick. </p>



<p>Again, it is crucial that you allow your flames to die down completely, and the coals become ashen before you start grilling your food. When the coals have ashed over, spread them across your bottom grate and place your top grate back on the charcoal grill. </p>

<h3 class="wp-block-heading" id="h-charcoal-grilling-for-beginners-how-much-charcoal-to-use">CHARCOAL GRILLING FOR BEGINNERS &#8211; HOW MUCH CHARCOAL TO USE</h3>



<p>How much charcoal to use on your charcoal grill will depend on the size of the grill itself, as well as the temperature that you want to cook at. However, as a general guideline, you&#8217;d want enough charcoal to cover the bottom of the grill in one layer. </p>



<p>For the Weber 22-inch grill that I suggested above, you&#8217;d want to use about 25 briquettes for low heat (250°F to 350°F), 50 briquettes for medium heat (350°F to 450°F), and 100 briquettes for high heat (450°F to 550°F). </p>



<h3 class="wp-block-heading" id="h-charcoal-grilling-for-beginners-how-to-use-a-charcoal-grill-without-chimney">CHARCOAL GRILLING FOR BEGINNERS &#8211; HOW TO USE A CHARCOAL GRILL WITHOUT CHIMNEY</h3>



<p>If you choose to light your charcoal grill without a chimney, you need to select a firestarter. You can use newspaper, wood pellets, firestart cubes, or lighter fluid. </p>



<p>While newspaper, or any paper, might be the most convenient option, it doesn&#8217;t always burn clean. Using old paper can create a lot of smoke, as it burns quickly.  A tip to prevent the newspaper from burning too quickly: scrunch it up into a ball as tightly as possible. </p>



<p>Lighter fluid is a good option, as it catches fire immediately. However, if you use too much lighter fluid, you can get big flames and your fire can get out of control quickly. If you cook too quickly, there&#8217;s a chance your food can taste a bit like the lighter fluid. Let the lighter fluid burn off completely and your coals ash over before grilling. </p>



<p>If you use a charcoal grill without a chimney, you&#8217;ll need wood pellets or firestart cubes underneath your charcoal mound to start your fire. Put your fire start on the bottom grill grate and build up your charcoal in a pile around the firestart. Use a torch, matchstick, or stick lighter to ignite the firestart and let the flames catch the charcoal. </p>

<p>Using a chimney is an efficient way to light the charcoal. Pour your charcoal briquettes into the top chamber of the chimney, and put your firestarter (balls of paper) underneath the chimney. After the firestarter is lit, allow the flames to burn and eventually catch the charcoal. This may take 10 minutes. Because you heat all the briquettes at once in the chimney, all the charcoal should be at the same temperature. This creates an even heat distribution in your grill and will cook all your foods evenly. </p>



<p>There are a few drawbacks to using a chimney in a charcoal grill. Because you are limited in how much charcoal can fit in the chimney, you may need to add more charcoal to your grill throughout your cooking process. Using a chimney requires time to heat the coals evenly, which may be a problem if you&#8217;ve got hungry mouths to feed!</p>



<h3 class="wp-block-heading" id="h-charcoal-grilling-for-beginners-how-to-use-a-charcoal-bbq-with-lid">CHARCOAL GRILLING FOR BEGINNERS &#8211; HOW TO USE A CHARCOAL BBQ WITH LID</h3>



<p>The purpose of a charcoal grill lid is to retain heat and moisture. The lid traps the heat from the charcoal and creates an even cooking temperature for your grilled foods. If you don&#8217;t use a lid, the hot air will escape and you will lose all the lovely smokey flavor. Your food will also become charred on the outside and dry on the inside. </p>



<p>The vents on the lid of your charcoal grill allow you to control how much smoke you want in your food. If you open them completely, you will have less of a smokey flavor. Using the lid creates a convection oven effect, which is ideal for smoking and slow-cooking your foods. </p>



<p>The lid is crucial when managing flare-ups. When the flames become too high, you use the lid to smother them and control the fire. Adjusting the vents in the lid can also control these flare-ups by reducing the oxygen. </p>



<h3 class="wp-block-heading" id="h-charcoal-grilling-for-beginners-how-to-use-charcoal-grill-vents">CHARCOAL GRILLING FOR BEGINNERS &#8211; HOW TO USE CHARCOAL GRILL VENTS</h3>



<p>To maintain temperature control of your grill, you will manipulate the charcoal grill vents by opening and closing them. There are two sets of vents: bottom vents and top vents. </p>



<p>The bottom vents fuel the fire by allowing oxygen to reach the flames. You should start with all three bottom vents open, and then slowly close them one by one until you reach the desired cooking temperature.</p>



<p>The top vents allow air and smoke to escape from the grill. If you were to close these vents completely, the fire would eventually extinguish itself, because the smoke needs to escape for fresh oxygen to be pulled in through the bottom vents. </p>



<h3 class="wp-block-heading" id="h-charcoal-grilling-for-beginners-how-to-smoke-foods-on-a-charcoal-grill">CHARCOAL GRILLING FOR BEGINNERS &#8211; HOW TO SMOKE FOODS ON A CHARCOAL GRILL</h3>



<p>But wouldn&#8217;t this be counterproductive if you want to smoke your food? Not exactly. When trying to smoke your meats, you&#8217;ll need to cook over indirect heat, also known as &#8220;two-zone grilling method&#8221;. </p>



<p>In this case, you would push your ashen coals and wood chips, to one side of the grill, using this side as your direct heat. This is where you would get that initial sear and char on your foods. When you are ready to smoke the food, move the food over to the side of the grill without the coals. This indirect heat from the coals will slowly finish cooking your food while allowing the smoke to flavor your food. <p>The wood chips thrown on top of the ashen coals will eventually catch fire and produce an aromatic smoke. Hickory, applewood, mesquite, and cherrywood are all popular varieties of wood chips. You can also mix and match the woodchips to create a unique flavor. </p>

<p>There are many benefits to grilling. Grilling doesn&#8217;t require complex equipment. Alone, a simple gas or charcoal grill can impart a fantastic depth of flavor to your food. You can always take it up a notch (cue Emeril Lagasse&#8217;s voice), with great marinating techniques, balancing seasonings, or using different wood chips to enhance the flavor further.  An electric grill, or a grill plate (also known as a plancha, iron, or griddle) is a great option if you live indoors, or do not have outdoor access. It&#8217;s one of the quicker cooking methods, which makes it ideal for weeknight meals or a fun large gathering. </p>



<p>Not only that but there are many health benefits to grilled food. Grilling allows excess fats to drip away from the food, resulting in a meal with a lower fat content. Grilling can help retain more nutrients in certain foods compared to boiling or frying. The quick cooking time minimizes nutrient loss, especially in vegetables. Because grilled vegetables cook quicker over a higher temperature, they can be more appealing texturally, encouraging people to consume more of these nutrient-dense foods.</p>

<p>We have all heard the benefits of cooking with olive oil— how it is a healthy fat, contains lots of antioxidants, and how consuming olive oil has many health benefits. While all of this is true, it is important to know the appropriate time and place to use this oil. High-heat cooking is NOT one of those times.</p>



<p>When sautéing, grilling, searing, or frying, be sure to pick an oil with a high heat tolerance, otherwise known as a <em>high smoke point cooking oil</em>. Avocado oil, grapeseed oil, and canola oil are all fantastic high-temperature cooking oils, as they are colorless, odorless, and generally mild flavored. <a href="https://www.amazon.com/dp/B006K3RCPC?tag=sophiefoodie-20" target="_blank" rel="nofollow sponsored noopener" data-lasso-id="21" data-lasso-name="La Tourangelle, Avocado Oil, All-Natural Handcrafted from Premium Avocados, Great for Cooking, as Butter Substitute, and for Skin and Hair, 16.9 fl oz">Avocado oil</a>, in particular, shares a lot of those healthy benefits that olive oil does, and for that reason, it is my personal favorite. </p>

<p>If you do use olive oil for high-heat cooking, keep in mind that olive oil will burn quicker than the oils listed above. When olive oil burns, it releases a chemical called acrolein. Acrolein is created from the combustion of burning oil, has an unpleasant odor, and can irritate the eyes, nose, and throat. Save your expensive olive oils for salad dressings, baking, and roasting, where your cooking temperatures are lower and cooking times are usually slower. </p>



<h3 class="wp-block-heading" id="h-2-be-confident-substituting-ingredients">2. Be Confident Substituting Ingredients </h3>



<p>Have you ever been in the middle of cooking dinner and realized that you don&#8217;t have enough sour cream that the recipe calls for? Don&#8217;t worry— we&#8217;ve all been there. But don&#8217;t panic! Knowing the appropriate ingredient swaps for cooking can save your dinner. (By the way, I love using Greek yogurt or labneh as a swap for sour cream.)</p>



<p>Sometimes, there isn&#8217;t an appropriate ingredient replacement, and that&#8217;s okay too! Have the confidence the execute a dish to the best of your ability utilizing your pantry basics to level up the flavor of the dish. Cooking is an art— lean into your creativity to be bold with your dishes! And if it doesn&#8217;t work out, count it as a learning experience. </p>



<h3 class="wp-block-heading" id="h-3-knife-skills">3. Knife Skills</h3>



<p>Knife skills are the backbone of every great home cook and chef&#8217;s skills. When you are just beginning cooking, it may be a good idea to take a knife skills class, or at least practice your knife skills at home with a 5 lb bag of potatoes or apples (mashed potatoes and applesauce for dayyys). </p>

<p>In addition to practicing your knife cuts, the most important kitchen tip is to practice <em>how to hold a kitchen knife</em>. The pinch grip is the best way to hold a knife, as it is the safest and most efficient way to chop and slice when cooking. Start by pinching the blade with your thumb and pointer finger close to the heel of the blade. Next, wrap your remaining 3 fingers underneath the handle of the knife.</p>



<p>Your other hand should be in a claw, with your pinky and thumb pinching the product you are cutting on either side. Your 3 middle fingers should be tucked underneath themselves, protecting the fingertips. Move the blade of the knife to the knuckles of your non-dominate hand, and chop away!</p>

<p>I can not stress this enough— salt is your friend! Seasoning your food in layers is a crucial cooking tip for you to elevate your dish to restaurant level. But what is a <em>pinch of salt</em>? When you see this step in recipes, be sure to grab your salt with all of your fingers and thumb. </p>



<p>A <em>dash of salt</em> is when you grab the salt with your pointer finger and your thumb, which is a much smaller quantity than a pinch. Usually, a dash of salt is more appropriate for baking, when you need to watch your salt levels more carefully. </p>



<p>There are a variety of different salts, and it can be difficult to know what the best salt is for cooking. <h3 class="wp-block-heading" id="h-5-tasting-as-you-go">5. Tasting as You Go</h3>



<p>Just as it is important to season in layers, it is also just as important to taste your food as you go. This way you can self-correct, or adjust the flavor of the food, as it continues to cook, rather than rushing to correct any potential mistake at the end of the cooking process. </p>



<p>Tasting your dish in all of its stages helps you &#8220;get to know&#8221; your food and understand building flavor, outside of simply just reading the recipe. Keep in mind, that the flavors of the dish will change over time, particularly if you are braising or reducing the liquid in the pan. Flavors become more concentrated over time as the liquid evaporates. </p>

<h3 class="wp-block-heading" id="h-6-mise-en-place">6. &#8220;Mise En Place&#8221;</h3>



<p>&#8220;Everything in it&#8217;s place&#8221; or &#8220;Gathering&#8221; or &#8220;Putting in it&#8217;s place&#8221;.  To be honest with you, all chefs have different interpretations of this french phrase, but the basis is the same. <em>Mise en place</em> is such an easy kitchen hack. Before you begin cooking, you need to PREP. Think of it this way, would you start painting a picture if the colors of paint you intended to use are still in the paint tubes? Would you begin to clean the bathroom if the chemicals are still in the garage? The answer is NO. You simply can not begin the process of cooking without having all the necessary ingredients ready and at your disposal. </p>



<p>Not only is cooking all about timing (ie; sweating the onions for 5 minutes before adding in the wine), but having all the ingredients prepared ahead of time takes the stress out of the cooking process, keeps the kitchen cleaner, and allows you to create dishes quickly and effortlessly. Having your <em>mise en place</em> allows you to focus on the cooking process, instead of stressfully juggling and multi-tasking. </p>



<p>Before you even turn on the stove, you should make sure that all the vegetables are peeled and diced, all your cooking equipment is pulled out of the drawers and cabinets, and your ingredients are measured. I personally also like to have a spare mixing bowl on the counter for trash or food debris so I can clean up as I go.</p>



<h3 class="wp-block-heading" id="h-7-adjusting-the-heat-of-your-pan">7. Adjusting the Heat of Your Pan</h3>



<p>When cooking ANYTHING on the stove, you will need to pre-heat your pans before adding your ingredients. This is an extremely important cooking tip everyone should know, as it helps your dish cook evenly by equally distributing the heat. </p>



<p>Hold your hand over the top of the pot or pan, about 4 to 5 inches away. I call this the &#8220;warm bath water&#8221; test. If the heat radiating from the pan feels like a warm bath, then you are ready to cook! </p>



<p>Additionally, you will never cook the entire dish throughout with the same level of heat. Depending on how many ingredients you have added to the pan, or what cooking technique you are doing, you will need to adjust the heat. For example, if you are reducing the liquid in the pan to make a sauce, you may want to have the heat on medium or medium high, rather than a low heat, as reducing a sauce on a low heat may take hours. If you are searing chicken breasts in a pan, you may want to start on a medium heat, but as you add more chicken to the pan, you will need to increase the temperature. </p>
